In Chinese tradition, noodles help to keep a meal in harmony – and so there are countless servings of noodles eaten each day around the world.

China, each region has its own traditions and techniques. But
hand-pulled and hand-shaved noodles are two of the most celebrated forms
of noodle-making, each requiring years of training to develop the
